Almost Chipotle Fajita Burritos


We love Chipotle Fajita Burritos, so we often make our own version at home. Here is what you will need:

1 lb chicken breasts, cut into bite size pieces
2 cups white rice
4 cups water
(optional) 1 tsp. lime juice
(optional) 1 tsp. cilantro
1 packet dry Chipotle flavored marinade (Lawry's or other similar)
1 can black beans
1 large onion, chopped
1 cup shredded cheddar or monterey jack cheese
1 tomato, chopped or salsa
1 cup shredded lettuce
1 package large (10") flour tortillas
(optional), sour cream


1. Put the rice and 4 cups water in a medium pot.  Add lime juice and cilantro, if desired, and 1 tsp. SALT. Cover and bring to a boil.  Turn off heat and let the rice steam for 20 minutes.

2. Meanwhile, add 2 Tablespoons of oil to a large skillet on medium heat.  Add the chicken, dry marinade packet, and chopped onion.  Cook, stirring occassionally, until chicken is cooked through.

3. Assembly:
Put a large spoonful of the rice onto each flour tortilla.  Spread down the center.
Top with 1/4 cup or so of the chicken.  Add desired amounts of beans, cheese, salsa/tomatoes, lettuce and sour cream.  Roll up and enjoy!
