Cornflake Peanut Butter Bars

My kids absolutely love these bars. They are extremely quick and easy with no baking involved, so even little kids can help. I usually cut the sugar and corn syrup to 3/4 cup each--just personal preference. Try these--they are YUMMY!


Cornflake Peanut Butter Bars

Ingredients:
1 cup white sugar
1 cup white corn syrup
1 18 oz jar creamy peanut butter
6 cups corn flakes or Special K cereal
2 cups chocolate chips

Directions:
In heavy saucepan, combine sugar and corn syrup and bring to boil.
Stir in peanut butter and cereal. Melt chocolate chips.
Coat 151/2-by-101/2-inch pan with vegetable oil spray.
Press mixture into pan. Spread chocolate evenly over mixture.
Let cool, then refrigerate about 20 minutes to let chocolate harden.
Remove from refrigerator and cut into bars. (Do not let mixture chill too long or it will be hard to cut bars.)
Makes 3 to 4 dozen.

    Here's a tip for those who are trying to delete corn syrup from their lives:
    substitute Rice Syrup! I use Lundberg Organic Brown Rice Syrup- the taste and consistency are a perfect replacement for corn syrup.

  2. Thanks for the tip! I've been leery of corn syrup lately, so I'll have to look for rice syrup and try that substitution.
