Ingredients:
¼ cup butter
4 cloves garlic, minced
1 Tbsp. chopped fresh parsley (or 1 tsp. dried)
½ tsp salt
2 cups crushed Corn Flakes
½ tsp paprika
½ tsp. onion powder
6 boneless skinless chicken breasts
1. Preheat oven to 375
2. Melt butter in skillet. Add garlic and heat for a minute over medium-low heat. Remove skillet from heat.
3. Mix crushed cornflakes, salt, herbs, onion powder and paprika in a large bowl.
4. Dip chicken pieces into garlic butter (coat both sides), then into cereal mixture.
5. Spray a baking sheet with non-stick spray.
6. Place chicken on baking sheet and bake for 20-30 minutes, or until no longer pink inside.
*I make chicken nuggets this way, too, (bake for less time) and the kids love them! They even eat the leftover chicken cold for lunches.
Also, I usually add a pinch of dried thyme and black pepper to the dry mixture.
