These are yummy--the streusel is inside the muffin, not on top.
1 3/4 cup flour
1/3 cup sugar
2 tsp baking powder
1/4 teaspoon salt
1 large egg, beaten
3/4 cup apple juice, cider, or milk
1 large apple, peeled and chopped
1 teaspoon vanilla
1/4 cup vegetable oil
Topping:
1/3 cup packed brown sugar
4 tablespoons flour
2 teaspoons cinnamon
2 tablespoons butter
1. Preheat oven to 400 degrees. Prepare a 12 count muffin tin or line with paper baking cups.
2. Prepare topping--mix sugar, flour, and cinnamon in a small bowl. Cut in butter until mixture is crumbly. Set aside.
3. To make the muffin batter, mix the flour, sugar, baking powder, and salt.
4. In a medium bowl, mix together teh egg, apple juice/milk, apple, vanilla, and oil. Add to dry ingredients and stir until moistened.
4. Fill each muffin cup with about a tablespoon batter, then sprinkle about a teaspoon of streusel topping over. Fill muffin cups with the remaining batter.
5. Bake for about 20 minutes or until centers are set. Cool on a rack.
