This recipe is another favorite at our house. It is more of a dessert muffin, almost a cupcake and comes from the cookbook "Mostly Muffins". This one is great in lunchboxes or for snacks.
1/3 cup chocolate chips
1 tablespoon butter
1 2/3 cups all purpose flour
1/2 cup firmly packed brown sugar
1 tablespoon baking powder
1/4 teaspoon salt
3/4 cup milk
1/2 cup peanut butter
1/3 cup vegetable oil
1 egg, lightly beaten
1 1/2 teaspoons vanilla
1/2 cup chopped salted peanuts without skins (optional)
1. Preheat oven to 400 degrees. Grease a 12 count regular muffin tin or line with paper baking cups.
2. In saucepan, heat butter and chocolate chips until melted (this can be done in the microwave on low power, also). Remove from heat.
3. In large bowl, stir together flour, sugar, baking powder, and salt.
4. In another bowl, cream together peanut butter, milk, oil, egg and vanilla until well blended.
5. Add wet mixture to dry ingredients.
6. Spoon half the batter into muffin cups. Drop one teaspoon of chocolate mixture into each of the muffin cups over the batter--do not let filling touch the sides of the muffin cups.
7. Spoon remaining batter over the filling.
8. Sprinkle tops of muffins with chopped peanuts if desired.
9. Bake for 20 -25 minutes or until lightly browned.
10. Cook on a wire rack.
