Oatmeal Muffins

Muffins are a favorite at our house because they are so easy and versatile and they are portable--perfect for kids on the go. You can make sweet muffins that are almost like dessert (chocolate chip, blueberry, lemon) or savory muffins to go along with soup and salad (cheddar and herb, pizza muffins).

I'm going to post a new muffin recipe everyday for the rest of the week.

To start us off, here is a recipe for Oatmeal Muffins. These muffins are easy yet hearty, perfect for busy school mornings. Double it and freeze some for later.


1 cup all purpose flour
1 cup rolled oats
1/2 cup packed light brown sugar
2 1/2 teaspoons baking powder
1/2 tsp salt
1/2 cup milk
1 egg, beaten
2 tablespoons melted butter
2 tablespoons vegetable oil
1 teaspoon vanilla

1. Preheat oven to 400 degrees. Grease a standard size 12-count muffin tin or line with paper liners.
2. Stir together flour, oats, baking powder, salt, brown sugar.
3. In large bowl, cream together the milk, egg, oil, butter and vanilla until well blended.
4. Add dry ingredients to the creamed mixture and mix just until combined.
5. Spoon into prepared muffin tin. Fill each only a little over halfway full.
6. Bake 15-20 minutes. Cool on a rack.
7. Try serving with butter, jam, or peanut butter.

*You can add 1 cup of a mix-in with the dry ingredients. Try adding raisins, chocolate chips, dates or butterscotch chips.
