Pepperoni Pizza Muffins

Adapted from Mostly Muffins

2 cups flour
2 teaspoons sugar
2 teaspoons baking powder
1/4 teaspoon dried oregano
1/8 teaspoon salt
dash of ground red pepper
1/2 cup shredded mozzarella (or cheddar) cheese
2 tablespoons grated parmesan cheese
1/2 cup tomato sauce
1/3 cup milk
1 egg, beaten
3 tablespoons melted butter
1/2 cup chopped pepperoni
*1/3 cup chopped green onions, optional

1. Preheat oven to 400 degrees. Prepare a 12 count muffin tin or use paper liners.
2. In a large bowl, stir together four, sugar, baking powdeer, oregano, salt, and red pepper. Stir in cheeses.
3. In another bowl, stir together tomato sauce, milk, egg, and butter. Add to dry ingredients and stir to combine. Stir in pepperoni and green onions if desired.
4. Spoon batter into prepared muffin cups. Bake for 15 to 20 minutes or until the centers are set.
5. Cool five minutes and then remove the muffins and let cool completely on a wire rack.
6. Store any leftovers in the refrigerator or freeze.

These savory muffins are great for snacks or when served along with a soup or salad.
