Quick and Easy Breakfast--Breakfast Burritos

Weekday mornings are always a rush around here, trying to get the six of us up, dressed and ready to go.

Often I'll make breakfast burritos, which are quick to make, cheap, and full of protein.

You'll need:

small sized flour tortillas (one per person)
eggs, one per person
heat and eat sausage links (Brown n' Serve or similar brands)
cheddar cheese, shredded
peppers, onions, mushrooms, spinach, scallions, etc.

Microwave or pan fry the sausage according to package instructions. Meanwhile, make scrambled eggs and warm the tortillas for a few seconds in the microwave.

To assemble, just crumble one or two sausage links onto each flour tortilla, follow with a few spoonfuls of scrambled eggs, and a tablespoon or so of shredded cheddar cheese. Add veggies or any other ingredients you'd like, then roll up and eat!

These are so easy, and you can make them healthier by substituting whole wheat flour tortillas, Egg-Beaters, and turkey sausage links.

Each serving is about $.50, so this is MUCH cheaper than store-bought convenience foods or fast food.
