Cinnamon Oatmeal Pancakes

I'm always looking for quick, cheap, filling breakfasts for my kids on busy weekday mornings.  This morning, we whipped up a batch of these pancakes--they are super quick to make, and are more filling than regular pancakes thanks to the added whole grain of the oatmeal.

Cheap, filling, healthy AND yummy--gotta like that!

INGREDIENTS:
1 1/2 cups flour
1 cup oatmeal
3 teaspoons baking powder
¼ teaspoon salt
2 Tablespoons sugar (either white or brown)
1 teaspoon cinnamon (use more or less to your personal tastes)
2 eggs, beaten
2 cups milk
2 tablespoons butter, melted
  1. Preheat a skillet or griddle (see note below)
  2. Mix flour, oatmeal, baking powder, salt and sugar in large mixing bowl.
  3. Add the milk and whisk. Add the eggs and melted butter; mix until all ingredients are incorporated.
  4. Melt a pat of butter on the griddle and spread it around to coat the surface. Pour ¼ cup of batter for each pancake.
  5. Flip the pancakes when the bubbles along the edges start to pop.
  6. Serve with butter and syrup or cinnamon sugar.
*Note--when I was about 10, my Mom taught me how to tell if a griddle is ready to cook pancakes.  Here's the trick--drop a few drops of water onto the hot griddle.  If they bounce and "dance" around, the griddle is at the perfect temp to cook pancakes.  If the drops just sit there, it is not quite hot enough yet.  If the drops immediately evaporate, it is too hot.
