Giveaway--Progresso Prize Pack (ends 11/4)

This is a fun giveaway for all of you who like to cook!  I was SO excited to receive this prize pack from Progresso and My Blog Spark.

Have you ever used Panko breadcrumbs?  If not--try them instead of regular breadcrumbs next time.  Panko crumbs are basically a Japanese style breadcrumb, but unlike American or Italian style crumbs that use all the bread (crust and all),  Panko crumbs are made from the interior of the bread.  The result is a lighter, crispier texture, perfect for breading chicken and fish.

I started using Panko crumbs a year ago or so, and I really like how the coating stays so crispy and crunchy, WITHOUT frying!  I have usually found Panko crumbs in the Asian aisle with the imported foods, but now that Progresso is making them--they should be easier to find.

We've used the crumbs for all sorts of purposes, including:
-mixing with herbs and spices and used to coat chicken (nuggets and whole pieces)
-mixed with sauteed onion, and a little butter and parsley to top baked fish
-in meatballs (egg, crumbs, chopped garlic, ground beef, and Italian herbs)
-coating a whole pork loin before roasting

This prize pack also includes a carton of Progresso Chicken Broth.  Broth is one of my kitchen staples--there are countless uses for it, like:
-using as a base for soup (chicken noodle, Italian Wedding, chicken and dumplings...)
-using in sauces (Chicken Piccata, chicken gravy...)
-using instead of water when making rice or mashed potatoes--this adds more flavor and richness

One lucky reader will get to try the Progresso Panko crumbs and Progresso Broth when they win their own prize pack, which also includes the other items shown in the photo--a very nice silicone ladle and slotted spoon, a liquid measuring cup (did you know liquid measuring cups are different than dry measuring cups?), an aluminum baking sheet pan, and a recipe book.  I'll choose one winner randomly from all entries on November 4.

While you're waiting to see if you've won, you can check out recipe ideas from Chef Michael Chiarello and print coupons at ProgressoFoods.com and ProgressoBroth.com.
