French Muffins

I found this recipe in a magazine years ago (don't remember which one) and it's our favorite--light muffins with a hint of nutmeg, topped with cinnamon-sugar.  Yum!  We always double the recipe and even then, they are all gone within 24 hours.  :)


FRENCH MUFFINS

Ingredients:

2 cups flour
2/3 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg (freshly grated if possible)
1 large egg
1 cup plus 2 tablespoons milk
6 tablespoons unsalted butter, melted and slightly cooled
1 teaspoon vanilla extract

Cinnamon-Sugar Topping:

1/2 cup sugar
1/2 teaspoon cinnamon
2 tablespoons unsalted butter, melted and slightly cooled


Instructions:

  1. Preheat the oven to 375°. Butter the bottoms or place paper liners in 12 muffin cups.
  2. Measure the flour, sugar, baking powder, salt, and nutmeg into a large mixing bowl and combine well. Set Aside.
  3. In a medium sized bowl, blend in the milk, melted butter, egg and vanilla extract. 
  4. Mix the dry ingredients into the wet a little at a time until it's evenly blended.
  5. Spoon the batter into the muffin cups, filling each about two-thirds full.
  6. Bake the muffins on the center rack for 20 minutes. Transfer to a wire rack to cool.
  7. While the muffins are still hot, prepare the topping by mixing the sugar and the cinnamon in a small bowl. Melt the butter in a separate small bowl in the microwave.
  8. Take one muffin at a time and dip the top in the melted butter and then in the cinnamon sugar, covering the entire top. Serve warm.

Makes 12 muffins.
