Free Blockbuster Rental for Kids w/ Good Grades on Report Card

Easy One Dish Recipe--Student's Ragout

My Mom used to make a dish when I was growing up called Studen't Ragout--it's an old fashioned meat and potatoes dish that is relatively cheap, very easy, cooks all together in one dish.  I make it now for my own family on occasion and everyone likes it (a feat in itself!). 

Ingredients:

1/2 pound of bacon (1/2 package) cut into 1" pieces
1 lb Round Steak (or other cheap, thin, lean cut of beef) cut into thin strips
1 large onion (or 2 small), sliced thinly
1/2 cup of carrots, cut into slices
1 cup beef broth or beef bouillion
4-5 potatoes, peeled and sliced about 1/4 " thick or thinner (I use my food processor's "thick" slice blade)
Salt and pepper


Directions:

Preheat a covered electric skillet if you have one to 350, or preheat a large skillet on the stove. Place the bacon in a single layer on the skillet to crisp, then flip to cook on the other side--keep an even layer.

While the bacon is cooking, prepare the other ingredients--slice the round steak into thin strips (like for a fajita), slice the onion thinly, peel and thinly slice the potatoes and carrots.

Blot any excess bacon grease with a paper towel after it's cooked, but don't remove the bacon from the skillet.  Next, you're going to layer all the ingredients--beef slices go on top of the bacon, followed by a sprinkle of salt and pepper.  The onion slices go on top of the beef, followed by the carrots, and the potato slices top it all off.  Sprinkle the potatoes with salt and pepper and turn down the heat to about 300 (medium/low).  Cover and let cook for about 10 minutes.

After about 10 minutes of cooking time has passed, pour 1 cup of beef broth or bouillon evenly over the top and cover.  Let cook on low for another 15 minutes or so then check to see if the potatoes are tender.  When the potatoes are nice and tender, the dish is done. 

*NOTE--you could probably sneak some peas in with the carrot layer to add more veggies.  :)
